Eggs are quick and easy and fit well into a low-carb woe (way of eating), but a girl can only eat scrambled/fried eggs with sausage or bacon so many times before the thought of another scrambled egg makes her stomach turn. That’s the point I am at, so I decided to try some recipes I found online. Some were blah, but many turned out absolutely delicious! Here are my top 10 low carb/keto breakfasts:
1: Sausage Puffs – These puffs aren’t just tasty, they are filling, and keep great in the fridge for quick breakfasts all week!
2: Jicama Hashbrown Casserole – This actually tastes like the original version! WoW! You HAVE to try this one!
3: Low Carb Breakfast Burritos – These go straight from the freezer to microwave so they are perfect for making ahead and just re-heating all week. Have I mentioned that they are DELICIOUS?? Just swap the milk for Heavy Whipping Cream to skip the extra sugar.
4: Make these Spaghetti Squash “Tater Tots” low-carb or Keto by swapping the Panko Bread Crumbs for Pork Rind “dust” (run them through a food processor or mash them with a rolling pin). Then use the Squash Tots to make this delicious Low Carb Breakfast Tot Casserole. The family won’t even know it’s low carb/ low sugar!
5: Keto Bagels are scrumptious, and so versatile!
6: This Peanut Butter Bread is beyond amazing! It’s my new favorite keto bread.
7: A lot of pancakes are a miss, but these Low-Carb, Gluten Free Pancakes really hit the spot!
8: You seriously have to try these Keto Biscuits. Make them extra special by stuffing them with one of these delicious jellies: Strawberry Chia Seed Jelly or Blueberry Lemon Chia Seed Jelly – Just swap out he maple syrup for sugar free maple syrup **BONUS: Chia seeds are PACKED with electrolytes!!
9: Keto Egg Muffins Nine Ways – Make ahead and freeze these yummy “muffins”.
10: Stuffed Low-Carb Crepes – No description necessary, these are just downright good.
